About the tasting
Is your food up to scratch? Do you aspire to AA Rosette standards, or do you simply want to improve your offering? Benefit from our overt assessment where you can afford to make mistakes and learn by them. Put your food through its paces without the potential for any negative results.
Objectives include increasing the quality of all aspects of the restaurant operation, promoting the use of quality ingredients, and understanding the balance of both menu and wine lists. We will benchmark against our Rosette criteria involving flavour, freshness, balance, quality, consistency and skillset.
This service is not a test, nor is it an opportunity for us to comment on a chef’s style or creativity. This session is designed to look at the food you are serving in relation to our market expectations and Rosette standards. As such, all dishes should be served as you would typically present them.

What you need to know
• Designed for current or potential 1 and 2 Rosette level establishments (higher awards are subject to longer term assessment)
• Carried out by trained and experienced AA inspectors (all inspector expenses to be refunded)
• We offer full menu, tasting, or a hybrid of these, usually one plate of each dish is adequate
• We come to you to sample your cuisine
