About the Rosette Academy

Take a deep dive into all things food. This workshop is aimed at the 1 and 2 Rosette level. We aim to cover all the key subjects that chefs as well as F&B managers and staff will find useful to drive their standards. From blind tastings to a live experience of a food inspection, this interactive course includes a series of short modules based on the 16 key performance indicators against which AA Inspectors assess culinary standards. We’ll also discuss common pitfalls and share tips on what we look for when awarding Rosettes.

What you need to know

• Full-day course (half-day available on request and if enough interest)
• Designed for chefs, senior food service employees and managers
• Carried out by trained and experienced AA inspectors
• Maximum of 30 people on a full day course and maximum of 15 on a half day course
• Some course requirements will expect you to provide elements including tasting items
• We come to you, all we require is a presentation space, projector and screen
• In some cases, overnight accommodation will be required the night prior to training
